- 1.5 pounds boneless, skinless chicken breast, sliced into thin strips
- 1 pound fresh string beans, washed, ends trimmed, and cut into 2-inch pieces
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup soy sauce (divided use)
- 2 tablespoons oyster sauce
- 1/4 cup chicken broth
- 1 tablespoon cornstarch (divided use)
- 1 teaspoon sesame oil (divided use)
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons vegetable oil (for cooking)
Instructions
- Slice chicken into thin strips and place in a bowl. Add 1 tablespoon soy sauce, 1 teaspoon cornstarch, and a splash of sesame oil. Toss to coat and let sit for 10 minutes.
- Wash string beans, trim ends, and cut into 2-inch pieces. Mince garlic and grate ginger. Set aside.
- In a small bowl, whisk together remaining soy sauce, oyster sauce, chicken broth, and remaining cornstarch until smooth.
- Heat a wok or large skillet over high heat. Add vegetable oil and wait until it shimmers and just starts to smoke.
- Add chicken strips in a single layer. Cook for 2-3 minutes until golden brown, flip, and cook for another 2 minutes. Remove chicken and set aside.
- Add a little more oil if needed. Add string beans and toss for 3-4 minutes until bright green and blistered. Add garlic and ginger, stirring constantly for 30 seconds.
- Return chicken to the pan. Pour sauce over everything and toss continuously for 1-2 minutes until sauce thickens and coats ingredients.
- Turn off heat. Drizzle with remaining sesame oil and sprinkle with red pepper flakes. Serve immediately over rice or noodles.
Notes
Ensure chicken is at room temperature and dried with paper towels for a good sear. Do not crowd the pan to avoid steaming. Use fresh string beans for best texture; frozen beans can become mushy. If sauce gets too thick, add a splash of water.
