Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 3 large assorted bell peppers (red, yellow, green), sliced into thin strips
  • 1 large yellow or white onion, sliced into half-moons
  • 2 tablespoons extra virgin olive oil
  • Juice of 2 to 3 fresh limes
  • 1 packet or homemade mix of fajita seasoning (chili powder, cumin, garlic powder, onion powder, paprika, salt, pepper)
  • 1 tablespoon sofrito (optional)
  • Flour tortillas, warmed

Instructions

  1. Wash and slice bell peppers and onions into thin, uniform strips (about 1/4-inch thick). Place them in the bottom of a 4 to 6-quart slow cooker.
  2. Pat chicken breasts dry with paper towels. Place them on top of the vegetables. If breasts are large, cut them in half horizontally.
  3. In a small bowl, whisk together olive oil, fresh lime juice, and fajita seasoning. Pour the mixture evenly over the chicken and vegetables.
  4. Cover and cook on Low for 6-7 hours, or until chicken reaches an internal temperature of 165°F.
  5. Remove chicken to a cutting board and let rest for 5 minutes. Stir the peppers and onions in the pot.
  6. Shred the chicken using two forks or kitchen shears.
  7. Return shredded chicken to the pot and toss with vegetables. Taste and add salt if needed. Keep warm on Low.
  8. Warm tortillas in a dry skillet or microwave before serving.

Notes

For best results, use firm peppers that feel heavy for their size. Ensure chicken reaches 165°F. If using frozen chicken, add 30-60 minutes to cooking time. For a smoky flavor, broil the chicken and veggies for 2-3 minutes at the end. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
