Ingredients

  • Boneless, skinless chicken thighs
  • Neutral oil (avocado or canola)
  • Salt
  • Black pepper
  • Garlic powder
  • Bourbon (mid-range like Maker’s Mark or Buffalo Trace)
  • Low-sodium soy sauce
  • Apple cider vinegar
  • Dark brown sugar
  • Fresh minced garlic
  • Fresh grated ginger
  • Cold butter

Instructions

  1. In a bowl, combine chicken thighs with a tablespoon of oil, salt, pepper, and garlic powder. Toss to coat and marinate for 15-30 minutes.
  2. In a separate bowl, whisk together half a cup of bourbon, a quarter cup of soy sauce, two tablespoons of apple cider vinegar, three tablespoons of brown sugar, one teaspoon of minced garlic, and one teaspoon of grated ginger until sugar is dissolved.
  3. Preheat the Blackstone griddle on high heat for 10-15 minutes until smoking hot.
