  • 1.5 pounds ground beef (80/20 lean recommended)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups long-grain white rice (jasmine or basmati)
  • 4 cups low-sodium chicken broth
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 810 large flour tortillas
  • 1 cup shredded Mexican blend cheese
  • 1 cup mild or medium salsa
  • 1/2 cup water (for seasoning sauce)

Instructions

  1. Rinse 2 cups of rice under cold water until clear. In a medium saucepan, combine rice and 4 cups chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
  2. While rice cooks, heat a large non-stick skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Brown thoroughly for 8-10 minutes, avoiding excessive stirring to allow searing. Drain excess grease if necessary.
  3. Add diced onion and minced garlic to the beef. Cook for 2-3 minutes until onion is soft. Stir in taco seasoning and 1/2 cup water. Simmer for 2 minutes until sauce thickens.
  4. Add black beans and salsa to the beef mixture. Stir to combine and simmer for another 2 minutes. Adjust seasoning if needed, then remove from heat.
  5. Warm tortillas in the microwave for 20 seconds or in a dry skillet for 30 seconds per side to make them pliable.
  6. Lay a tortilla flat. Spoon 1/2 cup beef mixture down the center, top with a scoop of rice and a sprinkle of cheese. Fold sides in and roll tightly from the bottom up.
  7. Wrap each burrito tightly in aluminum foil. Store in the fridge for up to 4 days or freeze for up to 3 months.

Notes

Do not overfill the burritos to prevent bursting. Let the filling cool slightly before assembling to avoid soggy tortillas. For best texture, microwave wrapped in a damp paper towel. Day 3 burritos often taste the best.
