Description

A sweet and savory slow cooker dinner featuring tender shredded chicken and egg noodles coated in a rich honey garlic sauce. This easy, one-pot meal is perfect for busy weeknights and meal prep.

  • 1.5 to 2 lbs boneless, skinless chicken breasts
  • 1/2 cup honey
  • 46 cloves fresh garlic, minced
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tsp garlic powder
  • Pinch of red pepper flakes
  • 1/2 cup low-sodium chicken broth
  • 8 oz egg noodles (or ramen/spaghetti)
  • Green onions, sliced (for garnish)

Instructions

  1. Trim excess fat from chicken breasts and place them in the bottom of a 4-6 quart slow cooker.
  2. In a medium bowl, whisk together honey, minced garlic, soy sauce, garlic powder, red pepper flakes, and chicken broth until combined.
  3. Pour the sauce mixture over the chicken, ensuring all pieces are coated. Let sit for 10 minutes.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches 165°F and shreds easily.
  5. Remove chicken from slow cooker and shred into bite-sized pieces using two forks.
  6. While chicken cooks, bring a large pot of salted water to a boil. Cook egg noodles according to package directions until al dente.
  7. Drain noodles and rinse briefly with cold water to stop cooking.
  8. Stir shredded chicken back into the slow cooker with the sauce and let sit for 5-10 minutes to meld flavors.
  9. In a large serving bowl, toss cooked noodles with the honey garlic chicken and sauce.
  10. Top with sliced green onions and serve immediately.

Notes

For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp cold water and stir into the slow cooker during the last 15 minutes of cooking. Cook noodles separately to prevent mushiness. Leftovers keep in the fridge for up to 4 days or can be frozen for up to 3 months.
