Instructions

  1. Place chicken breasts between plastic wrap or in a zip-top bag and pound to an even 1/2-inch thickness using a meat mallet or rolling pin.
  2. Set up a dredging station with three shallow bowls: one with flour mixed with half the salt, pepper, garlic powder, and paprika; one with eggs whisked with milk and remaining spices; and one with panko breadcrumbs.
  3. Dredge each chicken piece in the flour mixture, shaking off excess. Dip into the egg wash, letting excess drip off, then press firmly into the panko to ensure an even coating.
  4. Heat vegetable oil and butter in a large skillet over medium-high heat until the butter foams and subsides.
  5. Carefully place breaded chicken in the pan, cooking in batches to avoid overcrowding. Fry for 3-4 minutes per side until golden brown and crispy, with an internal temperature of 165°F (74°C).
  6. Remove chicken from the pan and let rest on a wire rack for 2 minutes before serving.

Notes

Ensure chicken is dry before breading to prevent soggy crust. Press panko firmly onto chicken to help it adhere. Do not overcrowd the pan; cook in batches if necessary. If breadcrumbs darken too quickly, lower the heat. For a gluten-free option, use almond flour and gluten-free panko. For a lighter option, bake at 400°F (200°C) for 20 minutes, flipping halfway.
