A quick and easy weeknight dinner featuring cod fillets coated in panko breadcrumbs and baked until crispy, then glazed with a sweet and savory honey garlic sauce.
Ingredients
- Cod fillets (fresh or thawed frozen, thick-cut)
- Panko breadcrumbs
- All-purpose flour (or gluten-free blend)
- Eggs (beaten)
- Honey
- Garlic (fresh, minced)
- Soy sauce (low-sodium recommended)
- Rice vinegar
- Butter (unsalted)
- Red pepper flakes
- Green onions (chopped, for garnish)
- Salt and pepper
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or grease lightly. If using a wire rack, place it on the baking sheet.
- In a small saucepan over medium heat, melt 2 tablespoons of butter. Add 4 cloves of minced garlic and sauté for 1 minute until fragrant.
- Stir in 1/3 cup honey, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, and a pinch of red pepper flakes. Simmer gently for 2-3 minutes until slightly thickened. Remove from heat.
- Set up three shallow bowls: one with 1/2 cup flour seasoned with salt and pepper, one with 2 beaten eggs, and one with 1 cup panko breadcrumbs.
- Pat cod fillets dry with paper towels. Dredge each fillet in flour, shaking off excess, then dip in egg, and finally press into panko breadcrumbs to coat evenly.
- Place breaded fillets on the prepared baking sheet or wire rack.
- Bake for 12-15 minutes until fish is opaque, flakes easily with a fork, and internal temperature reaches 145°F (63°C).
- Optional: Broil for 1-2 minutes at the end for extra crispiness, watching closely to prevent burning.
- Remove from oven and brush tops generously with the prepared honey garlic sauce. Serve immediately, garnished with chopped green onions.
Notes
Pat cod fillets very dry before breading to ensure crispiness. For extra crunch, toast panko breadcrumbs in the oven at 350°F for 5 minutes before breading. Avoid overcrowding the baking sheet to prevent steaming. Leftovers can be stored in the fridge for 2 days and reheated in the oven at 350°F for 10 minutes to restore crispiness.
