  • 6 slices thick-cut bacon
  • 1/3 cup all-purpose flour (for gravy)
  • 2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 cup crumbled cooked bacon

Instructions

  1. Pat pork chops dry with paper towels and season both sides with salt and pepper.
  2. Heat a large cast-iron skillet over medium heat and fry bacon slices until crispy (4-5 minutes per side). Remove bacon to a paper towel-lined plate, leaving 2 tablespoons of grease in the pan.
  3. In a shallow dish, mix 1 cup flour, cornstarch, paprika, garlic powder, onion powder, salt, pepper, and cayenne. In a separate bowl, whisk eggs and milk.
  4. Dredge pork chops in the egg mixture, then press firmly into the flour mixture to coat. Let rest for 5 minutes.
  5. Heat the skillet with bacon grease over medium-high heat. Fry pork chops for 4-5 minutes per side until golden brown and internal temperature reaches 145°F. Transfer to a wire rack and keep warm in a 200°F oven.
  6. Reduce heat to medium. Sprinkle 1/3 cup flour into the pan drippings and whisk for 1-2 minutes until golden. Slowly whisk in chicken broth and milk. Simmer until thickened (3-5 minutes).
  7. Stir crumbled bacon into the gravy. Season with salt and pepper to taste.
  8. Pour hot gravy over pork chops and serve immediately.

Notes

Ensure pork chops are completely dry before breading to ensure crispiness. Let breaded chops rest for 5 minutes before frying to help the coating adhere. Use a meat thermometer to ensure pork reaches 145°F. Store chops and gravy separately to maintain crust texture.
