- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 2 large eggs
- 1/2 cup milk
- 1 tablespoon paprika

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- Vegetable oil or lard (for frying)
- 6 slices thick-cut bacon
- 1/3 cup all-purpose flour (for gravy)
- 2 cups whole milk
- 1/2 cup chicken broth
- 1/2 cup crumbled cooked bacon
Instructions
- Pat pork chops dry with paper towels and season both sides with salt and pepper.
- Heat a large cast-iron skillet over medium heat and fry bacon slices until crispy (4-5 minutes per side). Remove bacon to a paper towel-lined plate, leaving 2 tablespoons of grease in the pan.
- In a shallow dish, mix 1 cup flour, cornstarch, paprika, garlic powder, onion powder, salt, pepper, and cayenne. In a separate bowl, whisk eggs and milk.
- Dredge pork chops in the egg mixture, then press firmly into the flour mixture to coat. Let rest for 5 minutes.
- Heat the skillet with bacon grease over medium-high heat. Fry pork chops for 4-5 minutes per side until golden brown and internal temperature reaches 145°F. Transfer to a wire rack and keep warm in a 200°F oven.
- Reduce heat to medium. Sprinkle 1/3 cup flour into the pan drippings and whisk for 1-2 minutes until golden. Slowly whisk in chicken broth and milk. Simmer until thickened (3-5 minutes).
- Stir crumbled bacon into the gravy. Season with salt and pepper to taste.
- Pour hot gravy over pork chops and serve immediately.
Notes
Ensure pork chops are completely dry before breading to ensure crispiness. Let breaded chops rest for 5 minutes before frying to help the coating adhere. Use a meat thermometer to ensure pork reaches 145°F. Store chops and gravy separately to maintain crust texture.
