  • 1 teaspoon cornstarch
  • 2 cups broccoli florets, cut into bite-sized pieces
  • 2 medium bell peppers (red or yellow), sliced into strips
  • 1 cup snap peas or snow peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons neutral oil (avocado or grapeseed)
  • 2 tablespoons coconut aminos or soy sauce
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon sesame seeds
  • 2 stalks green onions, chopped

Instructions

  1. Slice the flank steak against the grain into thin strips. Place in a bowl and toss with 1 teaspoon of cornstarch to help create a crispy exterior. Set aside.
  2. Wash and chop the broccoli, peppers, and snap peas. Mince the garlic and grate the ginger. Prepare all ingredients before heating the pan (mise en place).
  3. Place a wok or large skillet over high heat. Add the neutral oil and wait until it is shimmering but not smoking.
  4. Add the beef strips to the pan in a single layer, ensuring not to overcrowd the pan (cook in batches if necessary). Let the beef sit for a minute to brown, then flip and cook until just done. Remove beef to a plate.
  5. In the same pan, add a splash more oil if needed. Toss in the broccoli and peppers and stir fry for about 2 minutes. Add snap peas and cook for another minute until tender-crisp.
  6. Return the beef to the pan. Add the minced garlic and ginger, stirring constantly for 30 seconds until fragrant.
  7. Pour in the coconut aminos or soy sauce and the toasted sesame oil. Toss everything together to coat evenly.
  8. Sprinkle with red pepper flakes, sesame seeds, and green onions. Remove from heat immediately to serve.
  9. Serve immediately while hot and crispy, ideally with jasmine rice or cauliflower rice.

Notes

Slice beef against the grain for tenderness. Do not overcrowd the pan to ensure the beef sears rather than steams. Use fresh ginger and garlic for best flavor. Toasted sesame oil should be added at the end to preserve its flavor. This dish does not freeze well; store leftovers in the fridge for up to 3 days and reheat in a skillet to restore crispiness.
