Ingredients
- 1.5 lbs firm white fish fillets (cod, tilapia, or mahi-mahi), thawed and patted dry
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal (fine or medium grind)
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 2 large eggs, beaten
- 1/4 cup milk (or buttermilk)
- Vegetable oil (for frying)
- 2 cups shredded purple and green cabbage mix
- 1/4 cup fresh lime juice
- 2 tbsp white vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 cup sour cream
- 1/4 cup Greek yogurt
- 1 tbsp lime juice
- 2 tbsp finely chopped cilantro
- 1 small clove garlic, minced
- Corn tortillas (for serving)
Instructions
- Prepare the slaw: In a large bowl, combine shredded cabbage with lime juice, white vinegar, sugar, and salt. Toss well and let sit for 10 minutes.
- Make the crema: In a small bowl, whisk together sour cream, Greek yogurt, 1 tbsp lime juice, chopped cilantro, and minced garlic. Season with salt and pepper to taste.
- Set up breading station: Pat fish fillets dry and cut into strips if necessary. In one shallow dish, mix flour, cornmeal, and spices. In another dish, beat eggs with milk.
- Coat the fish: Dip fish pieces into the egg mixture, then press firmly into the cornmeal mixture to coat evenly. Place on a clean plate.
- Fry the fish: Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat. Fry fish pieces for 3-4 minutes per side until golden brown and crispy (internal temp 145°F). Place on a wire rack to drain.
- Warm tortillas: Heat corn tortillas in a dry skillet or over a gas flame for a few seconds on each side.
- Assemble: Place fish in tortillas, top with pickled cabbage slaw, drizzle with avocado lime crema, and serve immediately with extra lime juice and cilantro.
Notes
Pat the fish dry thoroughly before coating to ensure crispiness. Keep oil temperature consistent at medium-high to prevent greasy or burnt fish. For a gluten-free option, swap all-purpose flour for a gluten-free blend. For dairy-free, use coconut yogurt and olive oil. The slaw improves in flavor after sitting in the fridge for a day.
