Ingredients
- Yukon Gold potatoes (medium-sized, cut into 1-inch cubes)
- Thick-cut bacon strips
- Extra virgin olive oil
- Garlic powder
- Smoked paprika
- Kosher salt
- Freshly cracked black pepper
- Fresh parsley (optional, for garnish)
- Water (for soaking wooden skewers)
Instructions
- Wash potatoes and cut them into uniform 1-inch cubes, leaving skins on for texture.
- Place potato cubes in a large bowl and drizzle with olive oil, tossing to coat evenly.
- Add garlic powder, smoked paprika, kosher salt, and black pepper to the potatoes, tossing again to ensure even seasoning.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning; wipe metal skewers clean.
- Thread two potato cubes onto each skewer, leaving space between them for heat circulation.
- Wrap a strip of thick-cut bacon around the potato cubes on each skewer, spiraling from one end to the other. Secure the end by tucking it under or using a toothpick.
- Preheat grill to medium-high heat (approx. 400°F / 200°C).
- Place skewers on the grill grates and cook for 10-12 minutes, turning every 3-4 minutes with tongs.
- Cook until bacon is crispy and potatoes are tender (easily pierced with a fork).
- Remove skewers from the grill and let them rest for 2 minutes.
- Garnish with fresh parsley and serve immediately.
Notes
Ensure potato cubes are uniform in size for even cooking. If bacon browns too quickly while potatoes are hard, move skewers to a cooler part of the grill and cover with foil to steam. For oven preparation, bake at 400°F on a wire rack for 20-25 minutes, flipping halfway.
