A quick and easy weeknight dinner featuring tender shrimp in a rich garlic-lime creamy sauce, served on warm corn tortillas with crunchy cabbage slaw and avocado.

- 1 lb large or jumbo shrimp, peeled and deveined
- 1/2 cup sour cream (full-fat)
- 2 tbsp mayonnaise
- 2 limes (juiced)
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and black pepper to taste
- 1 ripe avocado, sliced or diced
- 1 cup red cabbage, shredded
- 8 small (6-inch) white corn tortillas
- Fresh cilantro, chopped
- Hot sauce (e.g., Cholula or Tapatío)
- 1 tbsp olive or avocado oil
Instructions
- Pat the shrimp dry with paper towels and season generously with salt, pepper, half of the cumin, and half of the chili powder. Set aside.
- In a small bowl, combine the sour cream, mayonnaise, juice of one lime, minced garlic, remaining cumin, and chili powder. Stir until smooth and set aside.
- Heat a large skillet over medium-high heat and add the oil. Once shimmering, add the shrimp in a single layer (cook in batches if necessary).
- Cook the shrimp for 2-3 minutes per side until pink and opaque, forming a ‘C’ shape. Remove from pan and set aside.
- In the same pan, warm the tortillas for about 30 seconds on each side until soft and pliable. Keep wrapped in a clean kitchen towel.
- To assemble, place a spoonful of shredded cabbage on a warm tortilla, top with cooked shrimp, and drizzle generously with the creamy sauce.
- Add sliced avocado, a squeeze of fresh lime juice, chopped cilantro, and hot sauce to taste. Roll up gently and serve immediately.
Notes
Do not overcook the shrimp; they should be pink and opaque. Ensure shrimp are very dry before cooking to get a good sear rather than steaming. Warm tortillas to prevent cracking. The sauce can be made up to 3 days in advance.
