Ingredients

  • 1 lb Large Shrimp (2125 count), peeled and deveined
  • 2 tbsp Unsalted Butter
  • 1 Shallot, finely minced
  • 2 cloves Garlic, fresh minced
  • 2 tbsp All-Purpose Flour
  • 1 cup Heavy Cream
  • 2 tbsp Dry Sherry Wine
  • 1 tsp Old Bay Seasoning
  • 1/4 cup White Wine or Chicken Broth
  • 2 tbsp Fresh Parsley, chopped
  • Salt and Black Pepper, to taste

Instructions

  1. If using frozen shrimp, thaw under cold water and pat completely dry with paper towels. Season lightly with salt and pepper.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon of butter and let it melt until foaming.
  3. Add shrimp in a single layer. Cook for 1-2 minutes per side until pink and opaque. Remove from pan and set aside.
  4. Reduce heat to medium. Add remaining 1 tablespoon of butter to the pan. Once melted, add minced shallots and sauté for 2-3 minutes until soft.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Sprinkle flour over shallots and garlic. Whisk constantly for 1-2 minutes to form a roux.
  7. Slowly pour in heavy cream while whisking vigorously to prevent lumps.
  8. Add sherry wine, Old Bay seasoning, salt, and pepper. Stir well and simmer for 2-3 minutes until sauce thickens slightly.
  9. Return cooked shrimp to the pan. Toss to coat evenly and heat through for about 1 minute.
  10. Remove from heat immediately. Serve warm over rice or pasta, garnished with fresh parsley.

Notes

Do not overcrowd the pan when cooking shrimp to ensure they sear rather than steam. Dry shrimp thoroughly before cooking. Serve immediately as the dish does not reheat well. For a lighter version, substitute half-and-half for heavy cream. For gluten-free, use cornstarch or GF flour blend.
