Creamy Shrimp Ceviche: 15-Min Quick Weeknight Meal

  • Author: ava_chapman
  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

A quick, no-cook weeknight meal featuring shrimp ‘cured’ in fresh lime and lemon juice, mixed with a creamy base of heavy cream or sour cream, avocado, and fresh vegetables. It’s light, zesty, and ready in just 15 minutes.

Ingredients

Scale
  • 1 lb raw shrimp, peeled and deveined
  • 1/2 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 1/2 cup heavy cream or sour cream
  • 1 ripe avocado, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño or serrano pepper, minced
  • 1 English cucumber, diced
  • 2 Roma tomatoes, diced
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Peel and devein the shrimp, rinse under cold water, and pat dry. Place in a medium bowl.
  2. Pour fresh lime and lemon juice over the shrimp to fully submerge them. Let sit at room temperature for 5-7 minutes until shrimp turn opaque white. Do not exceed 10 minutes.
  3. Dice red onion, cucumber, tomatoes, and peppers. Soak onions in ice water for 10 minutes to reduce bite, then drain and dry well. Mince garlic and chop cilantro.
  4. In a small bowl, whisk together heavy cream (or sour cream), cumin, salt, and pepper until smooth.
  5. Drain the citrus liquid from the shrimp. Add shrimp, drained onions, cucumbers, tomatoes, peppers, and garlic to a large serving bowl.
  6. Pour the creamy sauce over the mixture and toss gently to coat. Fold in cilantro last.
  7. Just before serving, fold in the diced avocado. Serve immediately with tortilla chips or plantain chips.

Notes

Ensure shrimp are fully submerged in citrus juice to ‘cook’ properly. Do not over-cure or shrimp will become rubbery. Soaking onions in ice water removes harshness. Serve chilled for best texture. Can be made dairy-free by substituting coconut milk for cream.
