- 1.5 lbs boneless, skinless chicken breasts
- 1 cup heavy cream
- 3–4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp dried parsley
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1/2 cup low-sodium chicken broth
- Salt and black pepper to taste
- 1/4 cup Parmesan cheese (optional)
Instructions
- Pat chicken breasts dry and pound to an even 1/2-inch thickness. Season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Sear chicken for 3-4 minutes per side until golden brown. Remove from pan and set aside.
- Reduce heat to medium. Add butter to the pan. Once melted, add garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and scrape up brown bits from the bottom of the pan. Simmer for 1 minute.
- Whisk in heavy cream and dried herbs. Stir to combine.
- Simmer sauce gently for 5 minutes until slightly thickened. Adjust seasoning if needed.
- Return chicken to the pan, spoon sauce over top, and heat through for 1 minute.
- Serve immediately.
Notes
Do not rush the sear to ensure a good crust. Keep heat low when adding cream to prevent splitting. If the sauce is too thick, add a splash of broth. For a lighter option, swap heavy cream for Greek yogurt added off the heat. Leftovers keep well for 3-4 days in the refrigerator.
