  • 4 thick-cut bone-in pork chops (1 to 1.5 inches thick)
  • 1 tablespoon olive oil or avocado oil
  • 3 tablespoons unsalted butter
  • 4 to 5 cloves fresh garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 cup heavy whipping cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • Kosher salt and freshly cracked black pepper to taste

Instructions

  1. Pat pork chops dry with paper towels and season generously with salt and pepper. Let sit at room temperature for 10 minutes.
  2. Heat olive oil in a large cast-iron or stainless steel skillet over medium-high heat. Sear pork chops for 3-4 minutes on the first side until golden brown. Flip and sear the other side for 2-3 minutes. Remove chops to a plate and set aside.
  3. Reduce heat to medium-low. Add butter to the same pan. Once melted, add minced garlic and cook for 1 minute, stirring constantly, until fragrant.
  4. Pour in chicken broth to deglaze the pan, scraping up brown bits from the bottom. Simmer for 1 minute.
  5. Stir in heavy cream, Dijon mustard, and dried thyme. Whisk until smooth and simmer gently for 2-3 minutes until the sauce thickens slightly.
  6. Return pork chops to the pan, nesting them into the sauce. Spoon sauce over the top. Cover and cook for 2-3 minutes until internal temperature reaches 145°F (63°C).
  7. Remove from heat and let rest in the sauce for 5 minutes before serving.

Notes

Do not overcook the pork; pull it at 140°F as it will carry over to 145°F while resting. Ensure the pan is hot enough to get a good sear on the meat. If the sauce is too thick, add a splash of broth; if too thin, simmer longer. Leftovers can be stored in the refrigerator for up to 3 days.
