- 4 thick-cut bone-in pork chops (1 to 1.5 inches thick)
- 1 tablespoon olive oil or avocado oil
- 3 tablespoons unsalted butter
- 4 to 5 cloves fresh garlic, minced
- 1/2 cup low-sodium chicken broth
- 1 cup heavy whipping cream
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- Kosher salt and freshly cracked black pepper to taste
Instructions
- Pat pork chops dry with paper towels and season generously with salt and pepper. Let sit at room temperature for 10 minutes.
- Heat olive oil in a large cast-iron or stainless steel skillet over medium-high heat. Sear pork chops for 3-4 minutes on the first side until golden brown. Flip and sear the other side for 2-3 minutes. Remove chops to a plate and set aside.
- Reduce heat to medium-low. Add butter to the same pan. Once melted, add minced garlic and cook for 1 minute, stirring constantly, until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up brown bits from the bottom. Simmer for 1 minute.
- Stir in heavy cream, Dijon mustard, and dried thyme. Whisk until smooth and simmer gently for 2-3 minutes until the sauce thickens slightly.
- Return pork chops to the pan, nesting them into the sauce. Spoon sauce over the top. Cover and cook for 2-3 minutes until internal temperature reaches 145°F (63°C).
- Remove from heat and let rest in the sauce for 5 minutes before serving.
Notes
Do not overcook the pork; pull it at 140°F as it will carry over to 145°F while resting. Ensure the pan is hot enough to get a good sear on the meat. If the sauce is too thick, add a splash of broth; if too thin, simmer longer. Leftovers can be stored in the refrigerator for up to 3 days.
