A quick and indulgent weeknight meal featuring seared steak bites tossed in a rich, garlicky cream sauce with pasta, ready in just 15 minutes.

- 1.5 lbs steak (Sirloin or Ribeye), cut into 1-inch cubes
- 12 oz pasta (penne, fusilli, or fettuccine)
- 4 tablespoons unsalted butter
- 4–5 cloves garlic, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ¼ cup beef broth
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- ½ teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat steak cubes dry and season generously with salt and black pepper.
- Bring a large pot of salted water to a boil. Cook pasta until al dente (8-10 minutes). Reserve ½ cup pasta water before draining.
- Heat olive oil in a large skillet over medium-high heat. Sear steak cubes in a single layer for 1-2 minutes per side until browned but pink inside. Remove steak and set aside.
- Reduce heat to medium. Add butter to the same skillet. Once melted, add garlic and red pepper flakes, sautéing for 30-60 seconds until fragrant.
- Pour in beef broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
- Add heavy cream and simmer gently for 2-3 minutes until slightly thickened.
- Reduce heat to low and stir in Parmesan cheese until melted and smooth. Add pasta water if sauce is too thick.
- Toss cooked pasta and steak bites back into the skillet. Stir to coat evenly in the sauce.
- Garnish with fresh parsley and serve immediately.
Notes
Do not overcrowd the pan when searing steak to ensure a good crust. Use freshly grated Parmesan for a smoother sauce. Reserve pasta water to help emulsify the sauce. Avoid using frozen steak as it releases too much water.
