Description

Ingredients

  • 1.5 lbs steak (Sirloin or Ribeye), cut into 1-inch cubes
  • 12 oz pasta (penne, fusilli, or fettuccine)
  • 4 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup beef broth
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat steak cubes dry and season generously with salt and black pepper.
  2. Bring a large pot of salted water to a boil. Cook pasta until al dente (8-10 minutes). Reserve ½ cup pasta water before draining.
  3. Heat olive oil in a large skillet over medium-high heat. Sear steak cubes in a single layer for 1-2 minutes per side until browned but pink inside. Remove steak and set aside.
  4. Reduce heat to medium. Add butter to the same skillet. Once melted, add garlic and red pepper flakes, sautéing for 30-60 seconds until fragrant.
  5. Pour in beef broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
  6. Add heavy cream and simmer gently for 2-3 minutes until slightly thickened.
  7. Reduce heat to low and stir in Parmesan cheese until melted and smooth. Add pasta water if sauce is too thick.
  8. Toss cooked pasta and steak bites back into the skillet. Stir to coat evenly in the sauce.
  9. Garnish with fresh parsley and serve immediately.

Notes

Do not overcrowd the pan when searing steak to ensure a good crust. Use freshly grated Parmesan for a smoother sauce. Reserve pasta water to help emulsify the sauce. Avoid using frozen steak as it releases too much water.
