  • Author: ava_chapman
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

A rich, savory, and incredibly comforting one-pot creamy crab stew that comes together in under 30 minutes using simple ingredients like lump crab meat, heavy cream, and Old Bay seasoning.

Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1 large yellow onion, diced
  • 3–4 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1 cup crab stock or fish broth
  • 16 oz lump crab meat
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat butter in a large pot over medium heat. Add diced onions and cook for 5 minutes until soft and translucent.
  2. Add minced garlic and cook for 1 minute, stirring constantly to prevent burning.
  3. Sprinkle flour over the onions and garlic, stirring constantly for 1 minute to create a light roux.
  4. Slowly whisk in crab stock or fish broth, continuing to whisk until the mixture bubbles and thickens slightly.
  5. Reduce heat to low, pour in heavy cream, and stir to combine. Add Old Bay seasoning, red pepper flakes, salt, and pepper. Simmer gently for 2-3 minutes without boiling.
  6. Gently fold in lump crab meat and heat through for 2-3 minutes. Do not overcook.
  7. Remove from heat, stir in fresh parsley, and serve immediately.

Notes

Use high-quality lump crab meat for the best texture. Ensure the cream does not boil vigorously to prevent curdling. The crab is already cooked, so only warm it through to avoid becoming rubbery. Serve with crusty bread or white rice.
