Description

Ingredients

  • 1 lb Sirloin or Ribeye steak, cut into 1-inch cubes
  • 4 tbsp Unsalted butter, sliced into pats
  • 34 cloves Fresh garlic, minced
  • 2 tbsp Fresh flat-leaf parsley, chopped
  • 1/2 tsp Kosher salt
  • 1/2 tsp Freshly cracked black pepper
  • 1 tbsp Olive oil or avocado oil
  • 1/4 tsp Red pepper flakes (optional)

Instructions

  1. Pat the steak cubes dry with paper towels and season generously with kosher salt and black pepper.
  2. Heat a large skillet (preferably cast-iron) over medium-high heat and add the olive oil.
  3. Add steak bites to the pan in a single layer, ensuring not to overcrowd the pan. Sear for 2-3 minutes per side until browned but still pink inside. Remove steak from the pan and set aside.
  4. Reduce heat to medium. Add the butter slices to the same pan and let them melt slowly.
  5. Once butter is mostly melted, add minced garlic and red pepper flakes. Cook for about 1 minute, stirring constantly, until fragrant but not browned.
  6. Return the steak bites to the pan and toss to coat evenly in the garlic butter sauce.
  7. Sprinkle chopped parsley over the steak and toss for another 30 seconds.
  8. Serve immediately while hot, spooning any remaining sauce over the top.

Notes

Ensure steak is patted very dry before cooking to achieve a good sear. Cut steak against the grain for maximum tenderness. Do not overcrowd the pan; cook in batches if necessary. If the butter starts to brown too quickly, remove the pan from the heat momentarily. For a dairy-free option, substitute butter with olive oil.
