- 4 tablespoons unsalted butter
- 1 tablespoon extra virgin olive oil
- 4–5 cloves garlic, freshly minced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon granulated garlic
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 1 tablespoon red wine vinegar (optional)
Instructions
- Pat the pork chops dry with paper towels to ensure a good sear.
- In a small bowl, mix together salt, pepper, granulated garlic, onion powder, and smoked paprika.
- Season both sides of the pork chops generously with the spice blend.
- Heat a cast iron skillet over medium-high heat and add the olive oil.
- Once the oil shimmers, place the pork chops in the skillet and sear undisturbed for 4-5 minutes until a golden-brown crust forms.
- Flip the chops and reduce heat to medium.
- Add the butter to the skillet. Once melted, add the minced garlic and dried thyme.
- Cook the garlic for about 30 seconds until fragrant, being careful not to burn it.
- Tilt the pan and baste the chops with the melted butter mixture for 2-3 minutes.
- Check the internal temperature with a meat thermometer; it should reach 145°F (63°C).
- Remove chops from the pan and let them rest for at least 5 minutes.
- Optional: Add a splash of red wine vinegar to the pan juices to create a quick sauce.
Notes
For best results, bring pork chops to room temperature before cooking. Do not overcrowd the pan; cook in batches if necessary. Ensure garlic is added after the butter melts and heat is reduced to prevent burning. Letting the meat rest is crucial for retaining juices.
