Copycat Smashburger Quesadillas: Faster Than a Timer

  • Author: ava_chapman
  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

These copycat Smashburger quesadillas are a quick, high-protein meal that mimics the signature smoky, charred beef flavor of the restaurant chain. Ready in under 15 minutes, they are perfect for busy weeknights and feature a unique mayo-infused beef patty for maximum juiciness and crust.

Ingredients

Scale
  • 1 pound ground beef (80/20 blend)
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas (burrito-sized)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons mayonnaise
  • 1 tablespoon vegetable oil

Instructions

  1. In a mixing bowl, combine ground beef, mayonnaise, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  2. Divide the beef mixture into four equal portions. Roll into balls and flatten into thin patties (about 1/4 inch thick).
  3. Heat a heavy-bottomed skillet (cast iron recommended) over medium-high heat with vegetable oil. Add beef patties and cook for 2 minutes without moving to develop a crust. Flip and cook for another 2 minutes until browned. Remove from pan.
  4. Wipe skillet if needed and return to medium heat. Place one tortilla in the pan. Sprinkle half the cheese on one half of the tortilla.
  5. Place two beef patties on top of the cheese, then add more cheese on top of the beef. Fold the tortilla over to create a half-moon shape.
  6. Cook the quesadilla for 2-3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and crispy and the cheese is melted.
  7. Remove from pan and let rest for 1 minute before slicing into wedges and serving immediately.

Notes

Use 80/20 ground beef for best flavor and juiciness. The mayonnaise in the beef helps create a crust and keeps the meat moist. Do not overcrowd the pan; cook one quesadilla at a time for crispiness. If the tortilla burns before the cheese melts, lower the heat to medium-low. For gluten-free options, use corn tortillas or certified gluten-free flour tortillas.
