  • 4 Chilean Sea Bass Fillets (about 6 ounces each)
  • 4 tablespoons Unsalted Butter (softened)
  • 2 tablespoons Extra Virgin Olive Oil
  • 4 cloves Garlic (minced)
  • 2 tablespoons Fresh Parsley (chopped)
  • 1 large Lemon (juiced and zested)
  • Salt and Black Pepper (to taste)
  • 1/4 cup White Wine (dry)
  • 1 small Shallot (finely minced)
  • 2 tablespoons Heavy Cream (optional)

Instructions

  1. Pat the sea bass fillets dry with paper towels and season both sides generously with salt and pepper. Let rest for 10 minutes to come to room temperature.
  2. In a small bowl, mix the softened butter, minced garlic, chopped parsley, and half the lemon zest. Set aside.
  3. Heat a heavy-bottomed skillet over medium-high heat and add olive oil until it shimmers.
  4. Place fillets in the pan, skin-side down if skin-on. Cook undisturbed for 3-4 minutes until a golden crust forms.
  5. Flip the fish, spoon the garlic butter mixture over the top, and reduce heat to medium-low. Cook for another 2-3 minutes, basting occasionally, until fish flakes easily.
  6. Remove fish to a plate. In the same pan, add white wine and shallots, scraping up browned bits. Reduce for 1 minute.
  7. Stir in heavy cream (if using) and remaining lemon juice. Simmer for 1 minute.
  8. Pour sauce over the fish, garnish with remaining lemon zest and parsley, and serve immediately.

Notes

Ensure fish is completely dry before searing for the best crust. Do not overcrowd the pan; cook in batches if necessary. Internal temperature should reach 145°F. Leftovers can be stored in the fridge for up to two days but do not freeze well.
