Ingredients

  • Thick-Cut Bone-In Pork Chops (1 to 1.5 inches thick)
  • Salted Butter (for basting)
  • Fresh Thyme
  • Fresh Rosemary
  • Fresh Garlic Cloves (crushed)
  • Olive Oil (high smoke point)
  • Kosher Salt
  • Black Pepper
  • Dijon Mustard (optional)

Instructions

  1. Bring pork chops to room temperature for 20-30 minutes and pat completely dry with paper towels.
  2. Season both sides generously with kosher salt and black pepper. If using, brush a thin layer of Dijon mustard on both sides.
  3. Heat a heavy-bottomed skillet (cast iron or stainless steel) over medium-high heat. Add olive oil and heat until shimmering but not smoking.
  4. Lay chops in the pan away from you. Do not move for 3-4 minutes to form a deep golden-brown crust.
  5. Flip chops and reduce heat to medium. Add butter, crushed garlic, and fresh herbs to the pan.
  6. Tilt pan and continuously baste chops with the hot herb butter for 3-4 minutes.
  7. Check internal temperature with an instant-read thermometer; pull chops at 140°F (60°C).
  8. Transfer to a warm plate, tent loosely with foil, and rest for 5 minutes before serving.
