Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with silicone mats or parchment paper. If using walnuts, toast them in a dry pan for 3-5 minutes until fragrant, then cool and chop.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together on medium-high speed for about 3 minutes until light, fluffy, and pale in color.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract. Scrape down the sides of the bowl.
- In a separate medium bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients. Mix on low speed or by hand until just combined. Do not overmix.
- Fold in chocolate chips and toasted walnuts by hand until evenly distributed.
- Cover the bowl and refrigerate dough for at least 30 minutes (optional but recommended for texture).
- Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 12-14 minutes until edges are lightly golden but centers still look soft.
- Let cookies sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use room temperature butter, not melted. Measure flour by spooning it into the cup and leveling it off to avoid dry cookies. Do not overbake; cookies will firm up as they cool. Store in an airtight container with a slice of bread to maintain softness. Dough can be frozen for later use.
