Description

  • ½ to 1 cup pink sugar (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy (2-3 minutes). Scrape down the sides of the bowl.
  3. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture on low speed. Mix just until combined; do not overmix.
  6. Scoop dough into balls and place on baking sheets spaced 2 inches apart. For thicker cookies, chill dough balls in the fridge for 20 minutes.
  7. Roll each chilled dough ball in pink sugar, coating completely.
  8. Bake for 10-12 minutes until edges are just starting to turn golden but centers still look soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Butter temperature is crucial; it should be softened but not melted. Chilling the dough helps prevent spreading and ensures a thick, cake-like texture. Do not overbake as cookies continue to cook on the hot pan. Store in an airtight container with a slice of bread to maintain softness.
