  • ¼ teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  3. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  5. Gradually add dry ingredients to wet mixture, mixing on low until just combined. Do not overmix.
  6. Fold in finely grated carrots and chopped walnuts (if using) with a spatula.
  7. Scoop dough mounds onto baking sheets, spacing them 2 inches apart. Press down slightly to flatten.
