A quick and easy weeknight dinner featuring ground beef, ranch seasoning, sharp cheddar cheese, and flaky biscuits topped with garlic butter. This comfort food bake comes together in under 30 minutes.
Ingredients
- 1 pound ground beef (80/20 blend)
- 1 packet ranch seasoning mix (or homemade blend of dried parsley, garlic powder, onion powder, dill, and buttermilk powder)
- 1 teaspoon garlic powder
- 2 cups sharp cheddar cheese, shredded
- 1 tube (approx. 16 oz) large buttermilk biscuits
- 1/4 cup unsalted butter, melted
- 2 cloves fresh garlic, minced (or 1/2 teaspoon garlic powder)
- Salt and pepper to taste
- Cooking spray or extra butter for greasing dish
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef, breaking it up with a wooden spoon. Drain excess grease if necessary, but leave some for flavor.
- Sprinkle ranch seasoning mix and garlic powder over the cooked beef. Stir to combine and cook for 1 minute to bloom flavors. Season with salt and pepper if needed.
- Spread the seasoned beef evenly into the bottom of the prepared baking dish.
- Sprinkle the shredded cheddar cheese evenly over the beef layer.
- Open the biscuit tube and cut large biscuits into halves or quarters. Arrange them on top of the cheese layer.
- Melt the butter in a microwave-safe bowl. Stir in the minced garlic. Drizzle the garlic butter generously over the biscuits, ensuring some gets underneath.
- Bake for 15-20 minutes until biscuits are golden brown and cheese is bubbly. Cover loosely with foil if biscuits are browning too quickly.
- Let cool for 5 minutes before serving. Garnish with chopped parsley or green onions if desired.
Notes
For best melting results, grate your own cheddar cheese rather than using pre-shredded varieties. Do not overcook the beef in the skillet as it will continue to cook in the oven. You can substitute ground turkey for a lighter option, adding olive oil to keep it moist. This dish freezes well; assemble but do not bake, then freeze for up to 3 months.
