Ingredients
- Large flour tortillas (burrito-sized)
- Large eggs
- Whole milk
- Shredded cheddar cheese
- Unsalted butter
- Salt and pepper

Instructions
- Whisk eggs, milk, salt, and pepper in a mixing bowl until frothy.
- Heat a large non-stick skillet over medium-low heat and melt butter, swirling to coat the pan.
- Pour egg mixture into the center of the pan, tilting to spread into a thin, even circle.
- Cook undisturbed for 2-3 minutes until edges set but top is slightly wet.
- Sprinkle shredded cheddar cheese evenly over the egg layer, leaving a border.
- Lay a tortilla over the egg and cheese, pressing lightly to adhere.
- Cook for 30-60 seconds until the tortilla bottom is golden and cheese is melted.
- Roll the tortilla tightly from one side, then flip the roll seam-side down.
- Cook for 1-2 minutes to seal the roll and crisp the outside.
- Remove to a plate and repeat with remaining ingredients.
- Slice roll-ups diagonally and serve immediately.
