  • Large bag of sturdy, thick-cut tortilla chips
  • 1 can black beans, rinsed and drained
  • Corn kernels (fresh or frozen)
  • Sharp cheddar cheese, grated
  • Pepper Jack cheese, grated
  • Monterey Jack cheese, grated (optional)
  • Jalapeños, sliced (fresh or pickled)
  • Green onions, chopped
  • Diced tomatoes
  • Salsa (medium heat preferred)
  • Sour cream
  • Fresh cilantro, chopped
  • Cumin
  • Chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse and drain black beans. Grate cheeses. Chop jalapeños, green onions, and tomatoes. Prep takes about 10 minutes.
  2. Place a heavy-duty skillet or cast-iron pan on a grill grate over medium heat. Warm for 3-5 minutes.
  3. Sprinkle a thin layer of tortilla chips into the bottom of the pan.
  4. Sprinkle a generous amount of the cheese blend over the chips, then scatter black beans and corn evenly.
  5. Cover the pan with a lid and cook for 2-3 minutes until cheese is mostly melted and chips are not burning.
  6. Remove lid. Add another layer of chips, cheese, and remaining beans. Cover again for another 2 minutes.
  7. Once cheese is fully melted and chips are crispy, remove from heat.
  8. Immediately top with fresh tomatoes, jalapeños, and green onions.
  9. Drizzle with salsa and sour cream. Sprinkle with cilantro and a dash of cumin. Serve immediately.

Notes

Use a blend of cheeses (Monterey Jack and Cheddar) for the best melt. Avoid pre-shredded cheese as it contains anti-caking agents. Add wet ingredients like salsa and sour cream only after removing from heat to keep chips crispy. If using a campfire, use glowing coals rather than direct flame to prevent burning.
