  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • ½ cup dark brown sugar, packed
  • ½ cup melted butter (unsalted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, peel and mash the ripe bananas with a fork until almost completely smooth.
  3. Melt the butter and let it cool slightly. Pour into the bowl with the bananas and mix with a whisk.
  4. Add granulated sugar and brown sugar to the wet mixture. Whisk vigorously for about 2 minutes until sugar starts to dissolve.
  5. Crack in the eggs and add vanilla extract. Whisk until the mixture is shiny and well combined.
  6. In a separate small bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  7. Pour the dry ingredients into the wet mixture. Gently fold together using a spatula or whisk until the flour just disappears. Do not overmix.
  8. Fold in chocolate chips if using, reserving a small handful for the top.

  10. Let brownies cool in the pan for at least 20 minutes before lifting out and slicing into squares.

Notes
