  • 1/4 cup Honey (raw or wildflower preferred)
  • 2 tbsp Soy Sauce (or Tamari for gluten-free)
  • 1 tbsp Rice Vinegar (unseasoned)
  • 1 clove Garlic, minced
  • 1 tsp Sesame Oil (optional)
  • Sea Salt (kosher preferred)
  • Black Pepper (freshly cracked)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper.
  3. Pat cod fillets dry with paper towels and season both sides lightly with sea salt and black pepper.
  4. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and sesame oil until smooth.
  5. Arrange cod fillets on the prepared baking sheet, ensuring they are not touching.
  6. Brush a generous amount of the honey glaze over the top of each fillet.
  7. Bake for 10-12 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  8. Optional: Broil for the last 1-2 minutes for a caramelized top, watching closely to prevent burning.
  9. Let fish rest for 2 minutes before serving. Drizzle with any remaining glaze from the pan.

Notes

Ensure fish is completely thawed and patted dry to prevent steaming. Honey burns easily, so do not overcook or use too much glaze. For a spicy kick, add red pepper flakes to the glaze. Can be substituted with salmon, halibut, or tilapia.
