An elegant and easy-to-make baked halibut dish featuring a rich garlic butter sauce, perfect for a romantic date night or a healthy weeknight meal.

- 6 oz Halibut fillets (center-cut, fresh or thawed frozen)
- 1/2 cup Unsalted butter (European-style preferred)
- 1 tbsp Extra virgin olive oil
- 4–5 cloves Fresh garlic, minced
- 1 large Fresh lemon (juice and zest)
- 1/4 cup Dry white wine (Sauvignon Blanc or Pinot Grigio) or chicken broth
- 2 tbsp Fresh parsley, chopped
- 1 tbsp Capers, rinsed (optional)
- 1 pinch Red pepper flakes
- Sea salt and black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Pat halibut fillets dry with paper towels and season both sides generously with sea salt and black pepper.
- In a small saucepan over medium-low heat, melt butter with olive oil. Add minced garlic and stir constantly for 2-3 minutes until fragrant but not browned. Remove from heat.
- Stir in lemon zest, lemon juice, white wine, red pepper flakes, and capers (if using). Taste and adjust seasoning.
- Place seasoned halibut fillets in a 9×13 inch baking dish. Pour the warm garlic butter sauce evenly over the fish.
- Bake for 15-18 minutes until the fish is opaque and flakes easily with a fork.
- Remove from oven, sprinkle with fresh parsley, and let rest for 2 minutes before serving with pan juices.
Notes
Do not overcook the fish as it will become dry. Ensure garlic does not brown to avoid bitterness. If using frozen halibut, thaw completely in the refrigerator and pat very dry. Can be served with roasted asparagus, garlic mashed potatoes, or a green salad.
